SAYA BIANKA

Located in Nad Al Sheba Mall, Dubai, this space is our take on blending retro-futuristic aesthetics with the cozy feel of your favorite bakery. We’ve filled the interior with warm caramel and cream tones to create an atmosphere that literally wraps you in warmth.

The highlight is the "croissant" decor: from sculptural ceiling installations to subtle details throughout the room. Our signature bear mascot adds a playful touch, while the rounded furniture and glossy amber chairs evoke the texture of molten sugar.

SAYA is a place where branding and design merge into one unforgettable experience.

The SAYA terrace at Nad Al Sheba Mall is the perfect outdoor extension of our "caramel" narrative. We wanted to create a space where the city’s rhythm slows down, making way for a relaxed, inviting atmosphere.

Step-by-step process that ensures flawless results

Every design stage matters — from idea to detail. Together they align vision with reality, prevent mistakes, and ensure the final space delivers its full impact.

01.Workshop:

The project began with an in-depth workshop to define goals, constraints, and the overall vision in close collaboration with the client. Although the restaurant was already operating, a site visit to Dubai allowed us to gather precise measurements and visual materials, helping us better understand the space and move forward with the redesign.

Site Immersion

The project began with a “Workshop” phase — a deep dive into the context and objectives. This is not just an introductory meeting, but a полноценне exploration of the space: we study engineering systems, location specifics, technical constraints, design goals, and the needs of the target audience. At this stage, we also gather references — interior examples, textures, and materials — working closely with the client and their team to define a clear vision for the future space.

At the start of our work, the restaurant was already operational but required a complete redesign. The client provided us with the previous project, allowing us to quickly engage in the process while temporarily postponing on-site measurements.

Nevertheless, we were able to travel to Dubai early on, experience the space in person, take our own measurements, and document everything through photo and video. Although this trip was not strictly necessary, being physically present helped us better understand the atmosphere and potential of the space.

As a result, we obtained accurate measurements, which were later verified and translated into drawings.

02.Concept:

The restaurant concept was revised twice, evolving from a bold desert rock and high-tech fusion into a lighter, more minimal and refined interior. The final design focuses on sculptural wall forms, a restrained monochrome palette, and subtle illuminated acrylic elements as accents.

Concept Evolution

The restaurant concept underwent two major transformations. The initial vision — a fusion of natural desert rock formations with high-tech interior elements — was highly praised by the client. However, following meetings with investors, a decision was made to move away from the rock theme and explore alternative approaches for the wall treatments.

The project went back to the drawing board. As a result, the interior became lighter, with a focus on wall plasticity — minimalist, clean in form, and subtly reminiscent of dough or a reimagined take on those original cliff textures. A signature element of the interior is the oversized pastry installations (specifically croissants) placed throughout different zones. We also integrated vibrant backlit acrylic elements, translucent acrylic furniture, brushed stainless steel, and custom figurines inspired by the famous KAWS aesthetic but reimagined in our own unique style.

The second revision focused on the color palette. We decided to move toward a more monochromatic scheme, reducing the number of bright and saturated elements. The glowing acrylic accents remained but were softened and "calmed down" to create a more sophisticated, balanced atmosphere.

We began the interior development, as always, with several layout options. It took a few iterations and meetings with the client to select the most suitable solution and refine it to a final state. During the planning phase, we even prepared several 3D diagrams to help the client better understand the volume and see how the layout decisions would impact the space.

Once the layout was approved, we moved on to visualization. At this stage, the project author already has a clear vision of the interior and works to communicate it as precisely as possible to the visualizer, who then creates a photorealistic 3D model. Preparing and delivering the visualization brief can take about a week or slightly longer, depending on the scale of the project.

The author selects all necessary furniture models in line with the concept or, if suitable options are not available, assigns a modeler to create them. Key interior elements are outlined in general terms — bar counters, cabinetry, large decorative features. A preliminary lighting and flooring plan is also developed — everything the visualizer needs to accurately recreate the future look of the space.

We handled this stage successfully and received the first version of the 3D visualizations.

03.Development:

After approving the final 3D visualization, we move on to developing detailed working documentation, providing contractors with all necessary drawings, specifications, and technical guidance for accurate implementation. This stage is carried out in close coordination with engineers, ensuring that all design solutions are both visually consistent and technically feasible, safe, and buildable.

Working Documentation & Technical Coordination


After the final 3D visualization of the restaurant is approved, we move on to the next key stage — the development of working documentation. This is a meticulous process in which we detail the entire volume of the restaurant, from overall zoning down to the smallest structural nodes and decorative elements. The main goal of this phase is to provide builders, engineers, and contractors with максимально precise and comprehensive information needed for accurate project implementation.

We produce a full set of drawings, including plans, sections, elevations, furniture details, lighting schemes, flooring layouts, equipment placement, as well as material and finish specifications. All of this is supported by explanatory notes so that every participant clearly understands the concept and can properly execute their part of the work.

The drawings are developed in close coordination with engineering specialists — architects, electricians, HVAC engineers, plumbers, and other related disciplines. We hold regular meetings and working sessions to align decisions, find optimal technical solutions, and ensure the design vision remains intact.

Additionally, during the preparation of working documentation, certain design elements often need to be уточнені or adapted to meet the technical constraints of the space. Our goal is to ensure that the final result not only reflects the project’s aesthetic but is also realistic, safe, and technically sound.

04.Implementation:

During the implementation phase, we coordinate closely with the client and contractors, selecting materials, resolving on-site issues, and ensuring all work aligns with the original design concept. Our role is to maintain the integrity of the design, while responsibility for construction and technical execution remains with the contractors and site manager.

Implementation & On-Site Coordination

During the implementation phase, we work closely with the client and the construction manager — selecting finishing materials, reviewing samples, coordinating with contractors, and providing any additional information beyond what is already included in the project documentation.

We address issues возникающие during construction and review contractors’ drawings to ensure they align with the original design concept. Most communication takes place online — in dedicated messaging groups and via video calls. In this project, we received daily site photos and responded оперативно to all возникающие questions.

Our key role at this stage is to oversee the realization of the project in line with the original concept — preserving its core ideas, functionality, comfort, and visual integrity. Responsibility for technical execution, concealed works, and the overall construction process lies with the construction manager and contractors.
